NSW LEP: What does 'Artisan Food and Drink Industry' mean?


Artisan Food and Drink Industry -


means a building or place the principal purpose of which is the making or manufacture of boutique, artisan or craft food or drink products only. It must also include at least one of the following—


(a)  a retail area for the sale of the products,

(b)  the preparation and serving, on a retail basis, of food and drink to people for consumption on the premises, whether or not liquor, take away meals and drinks or entertainment are also provided,

(c)  facilities for holding tastings, tours or workshops.


The Artisan Food and Drink Industry represents a unique and growing sector, characterised by the production of high-quality, small-batch food or beverage products that often highlight traditional techniques and local ingredients.


These spaces go beyond simple manufacturing; they create immersive experiences that connect consumers directly with the craft and culture of the products.


Whether it’s a microbrewery offering tastings of its latest craft beer, a boutique chocolatier running hands-on workshops or a small distillery showcasing its spirits in a retail setting, these establishments aim to merge production with community engagement.


By requiring at least one of the specified elements—retail areas, on-site food and drink service, or facilities for tastings and workshops—this category ensures that artisan producers contribute to both the economic and social vibrancy of their local area.


These features transform the space into more than just a production site, fostering opportunities for direct-to-consumer sales, brand storytelling, and interactive learning, all of which enhance the appeal and viability of the artisan industry.
